I’ve made a few Pinterest-inspired recipes recently, and two in particular were hugely popular with my family. So, I thought I’d share.

They’re both super easy and require very few ingredients.

The first I made a couple of days ago. I didn’t take a picture of the finished product because I really didn’t know how it was going to go over. It was inspired by this recipe at the Gluten Free Homemaker.

You need:

  • GF pizza sauce or spaghetti sauce (I used Contadina Pizza Squeeze)
  • mozzarella cheese, shredded (1 cup or so)
  • turkey pepperoni slices
  • GF pasta (I used Trader Joes penne), cooked according to directions and drained

I sprayed the ceramic pan with nonstick spray and preheated the over to 350. Layer sauce, then pasta, more sauce, shredded cheese, and pepperoni. Cook 20 minutes or until cheese is melted and pepperoni is getting all crispy and yummy.

You can also do two layers of each ingredient if you’re feeding a big crowd or want it to be cheesier and saucier (who doesn’t?).

Of course, you can add beef or sausage to the sauce, as well as peppers, onions, or other pizza toppings, but my kids like simple, so simple is how I played it.

Henry told me that it was the “best thing he’s ever had.” So, there you go.

The other super quick recipe I’ve been using lately (over and over again, as it’s become a family favorite) is cauliflower “poppers”. I think I’ve told at least 10 people about this method for cooking the kooky white vegetable, because it’s just so darn good.

Now, go make both of these. Seriously. And if you’re not Gluten Free, by all means, use regular noodles in the pasta. Your kids will thank me.
