I’ve been using Pinterest so much to figure out what to make for dinner or what to make for a gift/craft/home decorating item, that it was a little hard to choose what I’d do for the 52 Weeks of Pinterest Challenge this week from Julie at Dutch Being Me.

But it’s fall, and I found something incredibly easy to make and super yummy WITH PUMPKIN (of course!).

I believe I told you before how I roasted pumpkins and ended up with a bunch of jars of the the puree. Didn’t I? Well, I did (do that, that is).

Side note: The problem with doing these posts is that I have to go to Pinterest.com to find the link, and just opening the page forces me to see all kinds of other things to pin, like cheeseburger pie.


Anyway. I searched for pumpkin things to make, and came across this:

The pin says that these pumpkin muffins only take two ingredients (cake mix and pumpkin puree); the recipe says to use either yellow cake mix or spice. I chose spice, and ended up putting a cup of water in it as well (just cake mix and pumpkin is kind of clumpy and dry).

And you know, for fun (and because we had them leftover from Henry’s Halloween birthday party last year), I used some cute ghost cupcake tins.

THEY WERE DELICIOUS.

So moist, you don’t even need frosting (although, I bet some cream cheese frosting would be yummy, too).

And actually, after a day, the tops became almost alarmingly gooey. But the insides are exactly the same moist-deliciousness that you just have to overlook to gooey goodness on top.

The kids ate it with a fork.

I will DEFINITELY be making these again.Oh, and because you don’t use the normal eggs, milk, or oil that the cake mixes usually call for, it’s healthier (only four Weight Watchers points per muffin!).
