I know the title is nonsense, but whatever. What the nonsense, I say.
Anyway. I’m linking up with Julie at Dutch Being Me for the second week of her 52 Weeks of Pinterest Challenge. Did anybody make the meatloaf cupcakes? I know T.’s parents did, and enjoyed them! I got some more ground beef, so I’ll probably be making them again soon. But there was something about a recall on ground turkey? Or something? I don’t know, but maybe that’s why there wasn’t any at the grocery store the other day.
ANYWAY. I decided to try another recipe this weekend. Hootenanny. Or Oven Pancakes. Whatever you want to call them, they’re super easy and yummy.
The pin (I didn’t even have to click on it for the recipe) said “Easiest breakfast in the world — HOOTENANNY (Or Oven Pancake): Blend up 1 c. white flour, 1 c. milk, 6 eggs, and 1/4 tsp. salt. Pour batter into greased 9×13 pan. Then, pour 1/2 cube {I wasn’t sure exactly what a ‘cube’ was, so I used 1/2 a stick] melted butter over the top (do not mix). Bake for 25 minutes at 400 degrees. Cut in pieces, drizzle with Maple Syrup, serve.”
Yeah. That’s it. And guess what? Because all I ever seem to talk about (at least in regards to food) is Weight Watchers, a serving of this stuff (or 1/12 of a 9 by 13 inch pan) is only two points. Two! Awesome. And a little drizzle of syrup is only, like, one point. And the butter’s already on top, so you don’t need to add any more.
When I made it, it looked really funny, because the edges, where there wasn’t any drizzled melted butter, shot straight up. Okay…not really. But they were a lot taller than the middle.
Really, it more like french toast than pancakes. T. started out putting jelly on it (like he does with pancakes normally), then decided to try the second piece with some hot sauce. He said he liked it savory better. We even thought that it would be good sprinkled with cheese, or with some sausage or bacon mixed in before baking.
It was really easy, and my favorite kind of recipe: one with only a handful of ingredients.
